
2 Large eggplants.
1 chopped onion
2 crushed garlic cloves
1kg minced lamb
Crushed tomatoes
Tomatoe paste
Choppedfresh parsely
1 teaspoon sugar
1/4 teaspoon cinnamon
Salt, pepper
Parmesan cheese
For the cheese sauce you'll need:
Butter, flour, milk, an egg and some parmesan cheese.
Cut eggplant into slices, drizzle some olive oil, put in oven.
In a pan, put onion, garlic and oil, add mince..cook till brown, then add tomatoes, paste, parsely, sugar, cinnamon,salt and pepper.
In ovenproof dish, grease then line it with a layer of eggplant.
Then a layer of mince, repeat process then pour the cheese sauce.
To make the sauce:
Melt butter, add flour, stir untill bubbles then add milk, remove from heat, till thick. Add cheese, keep stirring untill it cools slightly then add the egg.
Finally, sprinkle some cheese on top with some nutmeg as well.
Put in oven for 30-45 mins or untill a bit browned.
