
1 chicken, cut into 4 and boiled with spices
2 medium eggplants, cut
1 medium potato,cut
2 medium zucchini, cut
2 medium tomatoes, cut
1 medium green bell peper, cut
Rice, washed and ready.
I used to fry all the veggies for this recipe-except for the tomatoes of course- but I switched into putting them in a pan, adding some olive oil and putting in a hot oven for a few minutes. It will do the trick.
Arrange the chicken with the veggie slices and the tomatoes in a pot, add 1/2 a cup of the stock with some salt and pepper. Leave to boil for a few minutes.
Half boil the rice in the stock, then add it to the chicken and veggies pot, let it cook through.
When serving, add some fried pine nuts if you want.
Voila!
