Onion Soup

Ingredients:

6 or 7 cups of meat or chicken broth

Gruyere cheese (Swiss cheese)

1/2 kg red onion peeled and sliced

3/4 cup flour

3/4 cup butter (room temp)

Slices of toasted bread or French baguette

salt & white pepper

Method:

Melt the butter & fry z onion until pale yellow, add salt & pepper then add flour. Mix with wooden spoon until you smell the flour aroma then add the broth & cook until slightly thickens.

Pour in individual bowls that can go into oven, top with bread then sprinkle the gruyere cheese (be generous) then put in a pre heated oven (400•) until the cheese melt

Makes about 4-6 servings
