Ingredients:
1 boneless & skinless chicken breast, about 10 oz. (cut into small cubes)
½ cup cashew nuts
1 small green bell pepper, about (cut into small square pieces)
5 slices ginger
1/4 onion (cut into small square pieces)
Marinate:
1 tsp baking soda,1 tsp corn starch,1/2 tsp cider vinegar
Sauce:
1/2tbls oyster sauce, 3/4 tsp soy sauce, 3tbls water, 3 dashes white pepper powder,1/2tsp sugar,1/2tsp cider vinegar,1/8 tsp sesame oil, salt to taste
Method:
1. Marinate chicken with baking soda 15-20 min then rinse chicken thoroughly. (Please make sure chicken is properly rinsed clean of baking soda.)
2. Pat chicken dry with paper towels, marinate with rest of ingredients for 15 min.
3. Mix the sauce together &set aside.
4. Heat up wok with 1tbls oil, stir-fry chicken until color turns white or half-cooked. Dish out &set aside.
5. Add another 1tbls of oil into wok and add in ginger slices, bell peppers &onions.
6. Stir-fry until you smell the peppery aroma then add chicken back in.
7. Add in cashew nuts and do a few quick stirs.
8. Add in sauce and stir continuously until the chicken is cooked &well coated with sauce. Add salt to taste.
