Oatmeal Cookies

My sister got this recipe off the net and made it.... very tasty and only brown sugar... chewy and yummy!

Oatmeal Cookies

1 cup walnuts or pecans, toasted and chopped
3/4 cup unsalted butter, room temperature
1 cup light brown sugar
1 large egg
1 tsp vanilla extract
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 ground cinammon
3 cups rolled oats (Quaker)
1 cup raisins , white of dark chocolate chips (optional)

* To toast nuts:preheat oven to 350.F and toast nuts for 8-10 minutes until lightly browned and fragrant. cool and chop into pieces. set aside.
* Line 2 baking sheet with parchment paper.
* Beat butter and sugar until smooth and creamy (2-3 minutes). Add egg, vanilla and beat to combine.
* In a separate bowl, whisk together the flour, baking soda, salt and cinammon.
* Add the flour mixture to the creamed mixture and beat. Stir in the nuts, oats and raisins or chips.

* Space the cookies about 5 cm apart on the baking sheet. THen wet your hands and flatten the cookies slightly with your fingers so they are about 1.25 cm thick.
* Bake cookies about 12 - 15 minutes or until lightly golden brown around the edges.
* Remove from oven and cool a few minutes before transferring them onto a wire rack to cool.

Makes about 20 - 24 cookies
