1 1/2 pounds flank steak or filet mignon cut into cubes
Marinade:
5 tsp Chinese cider vinegar, 4 tsp soy sauce,1 tbsp cornstarch,1 tbsp vegetable oil
Sauce:
2tbls ketchup,1 tbsp Worcestershire sauce, 2 tsp barbeque sauce,1tbls soy sauce,1 tsp granulated sugar
Other:
2small tomatoes,1 green bell pepper,1orange bell pepper,2cloves garlic,2green onions,6tbsp oil for stir-frying, or as needed.
Preparation:
Place beef in a bowl add the Cider vinegar, soy sauce, and cornstarch. Marinate the beef in the refrigerator for 30min. Add 1tbls oil and marinate for another 30min.
While the beef is marinating, prepare the sauce and vegetables.
Combine the sauce ingredients and set aside. Peel the tomatoes and cut into 6 equal wedges. Cut the peppers into cubes. Finely chop the garlic. Cut the green onions diagonally.
Heat the wok. Add 2tbls oil. When the oil is hot, add the beef. Brown briefly, then stir-fry until the beef changes color and is nearly cooked through. Remove from the wok. Add 2tbls oil to the wok. When the oil is hot, add the garlic and green onion. Then add the peppers. Then add the tomatos. Stir-fry until the veg are softened 3/4min
Push the veg up to the side of the pan. Add the sauce in the middle of the wok. Heat briefly then add beef. Mix everything together. Taste and add extra sugar or soy sauce if desired.
