
Chicken with aubergines (eggplant)

Chicken breasts
1 medium aubergine
1 tsp crushed garlic
2 diced green peppers
1 medium onion, diced
1/2 glass water
Spices (white pepper, cumin)
Vinegar
Salt
Peel aubergine, cut into cubes then fry.
Fry onion till golden, add spices, and garlic then green peppers. Mix for half a minute.
Add chicken and mix for 5 min then add the water and about 4 spoonfuls of white vinegar.
Add the salt, leave till chicken is cooked through then add the aubrigine cubes and you're ready to serve!
P.S if you like it to be spicy, you can throw in 2 diced chilies with the green peppers!
